Atchara sits on the side of the plate next to tocino or lechon, a small pile most people eat a forkful of and forget about. What's happening inside a proper jar of atchara
Real atchara starts with green papaya packed into a salt brine. The salt draws water out of the papaya and creates the exact environment Lactobacillus bacteria need to grow. Once they take hold, they consume the natural sugars in the papaya and convert them into lactic acid, the compound that makes atchara sour and keeps the bacteria alive when the jar reaches your table.

The papaya brings more than sourness

If a label lists vinegar high up with no mention of fermentation, treat it as a condiment rather than a source of live bacteria. Neither one is bad. They're doing different jobs.

- Serve two to three tablespoons alongside a meal rather than a single sliver

Keep it cold and eat it as it comes out of the jar, without heating it first. Next time you're at the palengke, reach for the cloudy jar instead of the clear one on the shelf, and you're getting a different product for the same price.
