Broccoli's reputation rests heavily on a compound called sulforaphane, which has real, well-documented biological effects. What gets discussed far less is that your own gut bacteria are the ones producing it, and how well they do that job varies a lot from person to person.

This beneficial compound doesn't exist in broccoli until bacteria make it

Broccoli itself doesn't contain sulforaphane directly. It contains a precursor compound that gets converted into active sulforaphane either by broccoli's own enzymes when it's chopped or chewed, or by your gut bacteria's enzymes if cooking has destroyed the plant's own version of that process. This means how you prepare broccoli changes which pathway your body ends up relying on.

A recent, plainly reported clinical trial

In 2025, researchers tested broccoli sprout extract in people with prediabetes over 12 weeks[1]. The trial didn't hit its main goal, but people still saw a real, statistically meaningful improvement, just a smaller one than hoped for. It's a modest result, but a real one, and it deserves to be taken at face value rather than written off as a failure.

Why some people respond more than others

That same trial turned up something else interesting: the people who responded most strongly had gut bacteria genes that convert the precursor compound into active sulforaphane more efficiently. It's a good clue for why broccoli seems to work wonders for some people and barely register for others across different studies.

The bacterial trade-off: active benefit or an inactive dead end

Your gut bacteria don't always take the beneficial route, either. Sometimes they convert broccoli's compounds into a biologically inactive form instead, and which path happens seems to depend on the mix of bacteria you're working with.

What to do with this

Lightly steaming broccoli, rather than boiling or heavily overcooking it, keeps more of the plant's own conversion enzyme intact. Chopping or chewing it thoroughly before cooking, and letting it sit for a few minutes before you heat it, gives that plant reaction more time to happen. Broccoli sprouts pack a lot more of the precursor compound than mature broccoli, so tossing a handful onto a meal is an easy way to boost your odds. Your gut bacteria mix is unique to you, so don't expect identical results to someone else eating the same broccoli, just steam it right, chew it well, and add sprouts when you can, and you're doing everything within your control to get the most out of it. Other cruciferous and antioxidant-rich vegetables, like kale and spinach, work through related but distinct mechanisms of their own.
