Gabi and gut health: what taro root does for fiber and digestive comfort

Gabi, taro root, ends up in laing, ginataang gabi, or boiled and eaten plain, and it carries a fiber profile that competes with more talked-about root vegetables while getting comparatively little attention in most conversations about gut-friendly Filipino food.

Gabi holds a fiber advantage over several more commonly discussed root vegetables, including the purple and orange kamote varieties, and much of that fiber comes in a form your gut bacteria can specifically use.

Why gabi's starch behaves differently once cooked and cooled

Like rice and potatoes, gabi's starch structure changes with cooking and cooling. Freshly cooked, hot gabi has a moderate glycemic impact. Cooled after cooking, some of that starch converts into resistant starch, the type your digestive enzymes can't break down, which travels to your colon and becomes fermentation fuel for your gut bacteria there.[1] Cooled rice develops more resistant starch than fresh hot rice through this same mechanism.

The oxalate consideration

Cook thoroughly: Raw gabi and its leaves contain calcium oxalate crystals, which cause an itching or irritating sensation if eaten undercooked, a reason gabi is always cooked thoroughly before eating rather than used raw. Proper cooking breaks down these compounds, which is part of why traditional preparation methods for gabi and its leaves, like the long simmering used for laing, exist the way they do. The oxalate issue isn't a gut bacteria concern specifically, more a reason gabi needs full cooking rather than the quick preparation some other vegetables get.

Laing, made from dried taro leaves simmered in coconut milk, takes the cooking-breaks-down-oxalates principle furthest, since the leaves are simmered for an extended period specifically to make them safe and palatable. The coconut milk also adds fat that helps with absorption of the fat-soluble vitamins present in the leaves.

What to do with this

If gabi is part of your regular cooking, boiling or steaming it, then letting it cool before eating, whether in a salad-style preparation or reheated the next day, increases the resistant starch your gut bacteria get to work with compared to eating it hot and fresh every time. Cooling gabi after cooking is a small preparation change rather than a different food, and it applies the same way to rice or kamote.
