Eating the same food late at night doesn't digest quite like eating it at noon. A randomized crossover trial of 845 adults in Spain found that a meal eaten close to bedtime produced blood sugar levels higher than the identical meal eaten earlier, along with weaker insulin release.[1]
The mechanism traces back to melatonin, the hormone that rises in the evening as part of the same circadian rhythm that governs daily shifts in gut bacteria, helping prepare the body for sleep. Blood melatonin levels were 3.5 times higher after the late dinner than after the earlier one. When melatonin and food arrive at the same time, insulin secretion doesn't work as well, so blood sugar stays elevated longer than it would after an identical meal eaten hours earlier.
About half the participants carried a genetic variant, in a gene called MTNR1B, that made this effect noticeably worse. People with that variant saw higher blood sugar after eating late than people without it, eating the exact same food.

None of this means a late snack is dangerous on an occasional night. The research is about a consistent pattern tested under controlled conditions, not a single late dinner after a long day. The people most affected in daily life are the roughly one-third of people in industrialized countries who regularly eat close to bedtime, along with shift workers and anyone dealing with ongoing jet lag.
What to do with this
If dinner regularly lands within an hour or two of sleep, the pattern itself is what to adjust, not any single late snack. Aim to finish your main meal at least three hours before bed most nights, which is roughly the gap between the "early" and "late" dinner times used in the Spanish trial. If a late-night snack is truly unavoidable because of work hours, lean toward something small and lower in refined carbohydrate, like a handful of nuts or plain yogurt, rather than a large plate of rice or dessert, where timing changes the impact just as much. The blood sugar effect this research measured was largest after carbohydrate-heavy meals.
