What happens to gut bacteria you stop feeding

Fiber doesn't just pass through you. It feeds a population of bacteria living in your large intestine, and when that food runs out, those bacteria don't simply go quiet. Some of them start eating the lining of your gut instead.

Researchers at the University of Michigan Medical School raised mice with no native gut bacteria of their own, then gave each one 14 known human gut bacterial strains. That setup let them track exactly what each species did as the diet changed.[1] When fiber disappeared from the diet, several species switched behavior within days. They began producing more mucus-degrading enzymes and consumed mucin, the protective mucus layer lining the colon, faster than the body could rebuild it.

Gut bacteria behave more like boarders than guests. Stop stocking the pantry, and boarders don't quietly leave. Some of them start eating the furniture. That shift toward mucus-degrading behavior is part of what's often described as gut imbalance.

Researchers haven't measured this exact mucus-eating effect directly in human volunteers, since doing so would require tissue sampling most people wouldn't sign up for. But the species studied belong to genera that also live in the human gut, with little reason to expect them to behave in a fundamentally different way once the food supply runs low.

The effect isn't really about total fiber avoidance, which is rare outside of extended water fasting. It's about how low, and for how long. A single low-fiber day, a plane trip, a wedding buffet, isn't the scenario this research describes. Weeks of consistently low fiber intake is closer to it.

What to do with this

Most adult fiber guidelines call for 25 to 38 grams a day, and most people currently eat closer to 15.[2] That gap is more than "not quite enough." It's a standing invitation for the mucus-eating behavior described above, played out over weeks rather than one bad day. Rather than trying to hit 25 grams overnight, add one whole plant food, a fruit, a vegetable, a legume, or a whole grain such as chia seeds, to each main meal this week. A sudden jump from 15 grams to 30 in a single day is the most common way people trigger the bloating that makes them quit. A steady climb over two to three weeks lets your existing bacteria adjust instead.
