This oat-based batter bakes around soft, caramelized apple slices, so you get all the comfort of a pancake stack without standing over the stove flipping batches. It deflates a bit once out of the oven, which is normal and doesn't take away from the taste.

Ingredients

  • 1 cup oat flour
  • 3 eggs
  • 3/4 cup milk of choice
  • 1 apple, thinly sliced
  • 1 tsp cinnamon
  • 2 tbsp butter or coconut oil
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 425°F (220°C) with an oven-safe skillet inside.
  2. Blend oat flour, eggs, milk, and vanilla until smooth.
  3. Carefully remove the hot skillet, add butter, then apple slices and cinnamon. Cook 2 minutes.
  4. Pour batter over the apples. Return skillet to the oven and bake 18-20 minutes until puffed and golden.
  5. Drizzle with maple syrup and serve immediately.
