Ingredients
- 2 salmon fillets (about 180g each)
- 1 tbsp olive oil
- 1/2 tsp fine sea salt
- 1 ripe avocado
- 2 tbsp butter, melted
- 1 tbsp lemon juice, plus lemon wedges to serve
- 1 tbsp fresh dill, chopped
Instructions
- Preheat oven to 400°F (205°C). Line a baking sheet with parchment.
- Rub salmon with olive oil and salt, then place skin-side down on the sheet.
- Bake for 12-15 minutes, until salmon flakes easily.
- Meanwhile, mash avocado with melted butter, lemon juice, and dill until mostly smooth with some texture remaining.
- Spoon the avocado lemon butter over the baked salmon and serve with lemon wedges.
