Baobab powder tastes like a cross between citrus and tart apple, which makes it an easy sell stirred into a jar of oats before bed. Five minutes tonight, breakfast waiting for you tomorrow, and a fruit that most Western pantries have never seen.

Ingredients

  • 1 cup rolled oats
  • 1 1/4 cups unsweetened almond milk
  • 2 tbsp baobab fruit powder
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup sliced strawberries, for topping
  • 2 tbsp sliced almonds, for topping

Instructions

  1. In a jar or bowl, combine oats, almond milk, baobab powder, maple syrup, chia seeds, vanilla, and salt.
  2. Stir thoroughly to make sure the baobab powder is fully dissolved and no clumps remain.
  3. Cover and refrigerate for at least 8 hours or overnight.
  4. In the morning, stir again and thin with a splash of almond milk if needed.
  5. Top with strawberries and sliced almonds before serving.

Why This Is Good for Your Gut

Baobab fruit powder is one of the most concentrated plant sources of soluble pectin fiber, which slows glucose absorption and serves as a preferred fuel source for Bacteroides and Faecalibacterium prausnitzii, a bacterium linked to lower gut inflammation. Oats add beta-glucan, another fermentable fiber that supports the same bacterial populations.
