The sweet potato brings soluble fiber and resistant starch, the black beans stack on even more fiber plus plant protein, and the yogurt on top tosses in a little live culture for good measure. Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked black beans
  • 1/2 cup corn kernels
  • 1/4 cup plain yogurt
  • Fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400F.
  2. Pierce sweet potatoes with a fork and bake 45-50 minutes until tender.
  3. Warm black beans and corn together in a small pot.
  4. Split open the sweet potatoes and top with the bean mixture, a dollop of yogurt, and fresh cilantro.
