Ingredients
- 2 lbs chicken wings
- 1 tbsp baking powder
- 1/4 cup fermented black garlic, mashed into a paste
- 1/4 cup raw honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- 1/2 tsp red pepper flakes
- 1 tbsp sesame seeds and sliced scallions, for garnish
Instructions
- Preheat oven to 425°F. Pat wings dry, toss with baking powder, and arrange on a wire rack over a baking sheet.
- Roast for 35-40 minutes, flipping halfway, until crisp and golden.
- While wings roast, whisk together black garlic paste, honey, soy sauce, rice vinegar, ginger, and red pepper flakes in a small saucepan.
- Simmer the glaze over low heat for 3-4 minutes, until slightly thickened.
- Toss the hot wings in the glaze and garnish with sesame seeds and scallions.
