Ingredients

  • 3/4 cup white rice, rinsed
  • 4 cups low-FODMAP chicken or vegetable broth
  • 1 boneless, skinless chicken breast
  • 1 tbsp fresh ginger, thinly sliced
  • 1 carrot, finely diced
  • 2 tbsp scallion greens only, thinly sliced
  • 1 tsp sesame oil
  • Pinch of sea salt and white pepper

Instructions

  1. Combine rice, broth, ginger, and carrot in a pot. Bring to a boil, then reduce to a low simmer.
  2. Nestle the chicken breast into the porridge. Cover and simmer for 20 minutes, stirring occasionally so the rice doesn't stick.
  3. Remove the chicken, shred it with two forks, and return it to the pot. Continue simmering uncovered for 10-15 minutes until the porridge is thick and creamy.
  4. Season with a pinch of salt and white pepper. Ladle into bowls and top with scallion greens and a drizzle of sesame oil.
