Ingredients

  • 1 bunch kale, stems removed, leaves torn
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 tablespoons tahini
  • 1 tablespoon water
  • 2 tablespoons pumpkin seeds

Instructions

  1. Place kale in a large bowl with olive oil and half the lemon juice.
  2. Massage with your hands for 2-3 minutes until the leaves soften and darken slightly.
  3. Whisk tahini, remaining lemon juice, and water into a dressing.
  4. Toss kale with the dressing and top with pumpkin seeds.
