Some brunches don't need a stove at all, just a big board and good ingredients arranged with a little care. This one leans on chickpeas, olive oil, and vegetables, which happens to make it as good for your heart as it is easy to throw together. Set it in the middle of the table and let everyone build their own plate, the same idea behind building a gut-friendly snack board for any gathering.

Ingredients

  • 1 cup hummus
  • 1/2 cup mixed olives
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes
  • 4 whole grain pita, warmed and cut into wedges
  • 1/2 cup roasted red peppers
  • 1/2 cup marinated artichoke hearts
  • Fresh parsley and mint
  • 2 tbsp olive oil for drizzling

Instructions

  1. Spread hummus in a wide bowl or directly on the board.
  2. Arrange olives, cucumber, tomatoes, roasted peppers, and artichokes around it.
  3. Warm pita and cut into wedges. Add to the board.
  4. Drizzle everything with olive oil and scatter fresh herbs over the top.

Why This Is Good for Your Gut

Chickpeas in the hummus provide fiber and resistant starch that feed beneficial gut bacteria. Olive oil supplies monounsaturated fat consistently linked to better heart health. The mix of vegetables adds polyphenol diversity, which research suggests supports a more diverse gut microbiome than any single food could.

Set it out and let people build their own plates, which is half the fun of brunch anyway. Swap in a batch of Roasted Garlic Hummus for the plain hummus if you want more depth.
