Ingredients
- 1 medium kabocha squash, seeded and cut into wedges
- 3 tbsp white miso paste
- 2 tbsp maple syrup
- 2 tbsp rice vinegar
- 2 tbsp neutral oil

- 1 tsp toasted sesame seeds
- 2 scallions, sliced
Instructions
- Preheat oven to 425F and line a baking sheet with parchment.
- Whisk together miso paste, maple syrup, rice vinegar, oil, and ginger.
- Toss kabocha wedges in the glaze until evenly coated.
- Arrange wedges skin-side down on the baking sheet.
- Roast 20 minutes, then flip and brush with remaining glaze.
- Roast another 15-20 minutes until edges caramelize and flesh is fork-tender.
- Sprinkle with sesame seeds and scallions before serving.
