Rejuvelac is fermented wheat berry water, tangy and lightly effervescent, and it makes a surprisingly good liquid for soaking oats overnight. Instead of plain milk or water, you get a batch of oats that's already doing some fermenting work before your spoon ever touches it.

Ingredients

  • 1/2 cup wheat berries, for the rejuvelac
  • 3 cups filtered water, for the rejuvelac
  • 1 cup rolled oats
  • 1 cup prepared rejuvelac
  • 1 tbsp chia seeds
  • 1 tbsp almond butter
  • 1/2 cup sliced strawberries
  • 1 tbsp ground flaxseed
  • Honey or maple syrup, to taste

Instructions

  1. Rinse the wheat berries and soak in the filtered water inside a clean jar, covered with a breathable cloth, for 2-3 days at room temperature until the liquid turns cloudy and slightly sour.
  2. Strain the liquid into a separate jar; this is your rejuvelac. Refrigerate and use within a week.
  3. Combine the rolled oats, rejuvelac, chia seeds, and flaxseed in a jar or bowl.
  4. Stir well, cover, and refrigerate overnight, or at least 6 hours.
  5. In the morning, stir in the almond butter and a drizzle of honey to taste.
  6. Top with sliced strawberries before serving.
