Roasting grapes concentrates their natural sweetness and brings out a jammy texture that pairs perfectly with creamy ricotta on crusty bread. Grapes carry resveratrol and other polyphenols that support a healthy gut environment, making this an appetizer that's actually working in your favor, not just a vehicle for cheese and bread.
Ingredients
- 2 cups seedless red grapes
- 1 tbsp olive oil, plus more for the bread
- 1 tsp fresh thyme leaves
- 1 baguette, sliced and toasted
- 1 cup ricotta cheese
- Honey and black pepper to finish
Instructions
- Preheat oven to 200C. Toss grapes with olive oil and thyme. Spread on a baking sheet.
- Roast 15-20 minutes until grapes are soft and beginning to burst, releasing their juices.
- Brush baguette slices with olive oil and toast until golden.
- Spread ricotta generously over each toasted slice. Top with roasted grapes and a drizzle of honey. Finish with black pepper.

Why This Is Good for Your Gut
Grapes contain resveratrol and other polyphenols shown to support a healthy balance of gut bacteria. Roasting doesn't diminish this benefit. Ricotta provides protein and calcium, with some brands offering probiotic potential.
This one's great for entertaining, it looks far more impressive than the ten minutes of effort it actually takes.
