This is the bowl you make when you want to throw half the produce drawer at your gut microbiome and call it dinner. Cauliflower and bell peppers bring plant fiber and polyphenols, chickpeas add both protein and a hit of resistant starch, and the quinoa underneath rounds it all out with more fiber and a full amino acid profile. Roast everything until the edges char a little, pile it over quinoa, and finish with lime and cilantro. Roasting really is the entire technique.

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 zucchini, sliced
  • 2 bell peppers, sliced
  • 1 cup cooked chickpeas
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 2 cups cooked quinoa
  • Fresh lime juice and cilantro to finish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425F.
  2. Toss cauliflower, zucchini, bell peppers, and chickpeas with olive oil, cumin, paprika, salt, and pepper.
  3. Spread on a large baking sheet and roast 25-30 minutes, tossing halfway, until tender and lightly browned.
  4. Serve over cooked quinoa with a squeeze of fresh lime juice and chopped cilantro.
