Cauliflower and chickpeas turn out to be an underrated pair of gut foods, and this sheet pan barely asks anything of you. Cauliflower brings glucosinolates that your gut bacteria break down into sulforaphane, while the chickpeas are stacked with resistant starch and soluble fiber that your microbiome loves to ferment. Roast them together until the edges go golden and a little crispy, and you get a side dish that tastes like more effort than it actually took. Ingredients

  • 1 head cauliflower, cut into florets
  • 2 cups cooked chickpeas, drained and patted dry
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Toss cauliflower and chickpeas together with olive oil, smoked paprika, cumin, salt, and pepper.
  3. Spread on a large baking sheet in a single layer and roast for 30-35 minutes, tossing halfway, until golden and crispy.
