Bone-in chicken thighs roasted directly on top of a bed of chickpeas and tomatoes let the fat render straight down into the beans as they cook. By the end, the chickpeas have practically confited in chicken drippings and turmeric, and the chicken skin comes out deeply golden. Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 cans (400g each) chickpeas, drained and rinsed
  • 1 can (400g) diced tomatoes
  • 1 onion, sliced
  • 4 cloves garlic, smashed
  • 2 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro and lemon wedges to serve

Instructions

  1. Preheat oven to 200°C (400°F). Pat chicken thighs dry and season generously with salt, pepper, turmeric, cumin, and smoked paprika.
  2. In a large oven-safe baking dish, combine chickpeas, diced tomatoes, onion, garlic, and olive oil. Season with salt and pepper.
  3. Nestle the seasoned chicken thighs, skin-side up, on top of the chickpea mixture.
  4. Roast 45-50 minutes until chicken skin is deeply golden and crisp and the chickpeas have absorbed the drippings.
  5. Rest 5 minutes. Garnish with cilantro and serve with lemon wedges.
