Ingredients
- 1 lb ground turkey
- 2 tbsp olive oil
- 1 medium sweet potato, diced small
- 2 cups baby spinach
- 1 tbsp fresh sage, chopped
- 1 tsp fine sea salt
- 1/2 cup bone broth
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced sweet potato and cook, stirring occasionally, for 8 minutes until starting to soften.
- Push sweet potato to one side, add remaining olive oil, and add ground turkey to the empty side of the pan. Break it up and cook until no longer pink, about 6 minutes.
- Stir turkey and sweet potato together, add bone broth, sage, and salt. Cover and simmer for 5 minutes until sweet potato is fully tender.
- Stir in spinach and cook just until wilted, about 1 minute.
- Taste and adjust salt before serving.
