Turmeric turns salmon a deep gold before it even goes in the oven, and roasting the greens right alongside it on the same tray means the fish drippings baste the kale as everything cooks. This is one tray, one rinse of turmeric-stained hands, and a dinner that pairs a genuinely anti-inflammatory spice with one of the best omega-3 sources available. Fifteen minutes of active time, tops.
Ingredients
- 2 salmon fillets (about 150g each)
- 1 1/2 tsp ground turmeric
- 1 tbsp fresh ginger, grated
- 2 tbsp olive oil
- 4 cups curly kale, stemmed and torn
- 1/2 tsp black pepper (helps turmeric absorption)
- 1 lemon, sliced
- Pinch of sea salt
Instructions
- Preheat oven to 200°C (400°F). Mix turmeric, ginger, 1 tbsp olive oil, black pepper, and a pinch of salt into a paste. Rub over the salmon.
- Toss kale with remaining olive oil and spread on a baking tray. Place salmon on top, skin side down, with lemon slices.
- Roast for 12-14 minutes until the salmon flakes easily and the kale edges crisp slightly.
- Serve immediately while the kale is still warm and crisp.

Why This Is Good for Your Gut
Curcumin in turmeric is one of the most studied natural compounds for reducing gut mucosal inflammation, and pairing it with black pepper's piperine dramatically improves how much of it your body actually absorbs. Salmon's omega-3s work alongside curcumin to calm inflammatory signaling, while kale contributes fiber that feeds the bacteria responsible for repairing the gut lining.
Save the turmeric paste for chicken or tofu too, since it works just as well beyond salmon. If you'd rather use it on white fish, the Ginger-Turmeric White Fish Soup is a good place to start, or try Baked Salmon with Lemon, Dill and Quinoa for another salmon dinner.
