Walnuts sit among the top sources of polyphenols in the entire food supply, ranking seventh by serving size among commonly eaten foods and drinks, and the specific compound your gut bacteria make from them has become a genuine research focus of its own.
The compound behind walnuts' gut reputation
Walnuts are especially rich in ellagitannins, and pedunculagin is the most abundant among them.[1] Once you eat walnuts, stomach acid breaks these down into ellagic acid, which your gut bacteria then metabolize further into urolithins, compounds with real anti-inflammatory activity of their own.
Why the same walnuts affect people differently
A study tracking 27 healthy adults eating 33 grams of raw walnuts over just three days found that whether someone's gut bacteria could convert ellagic acid into urolithins at all depended on their individual "urolithin metabotype," a classification based on which bacteria they happen to carry.[2] People were grouped into metotype A, B, or a non-producing group called metabotype 0, and this classification predicted how responsive each person's gut bacteria were to the same walnut intervention. A systematic review pooling eight studies on tree nuts and peanuts found walnuts stood out specifically for producing shifts in overall gut bacteria community structure more consistently than other nuts tested.[3] Several studies found increases in short-chain-fatty-acid-producing bacteria including Roseburia, Lachnospira, and Dialister following nut consumption, with walnut and almond interventions specifically linked to increased Roseburia in more than one trial.[4]

Research has found walnut consumption changed gastrointestinal bacteria and the secondary bile acids those bacteria produce, alongside reductions in total and LDL cholesterol in healthy adults.[5] This suggests walnuts' cholesterol benefit may run partly through the same gut bacteria pathway responsible for their prebiotic effects, rather than being a separate, unrelated mechanism.
