- 6 cups beef bone broth
- 1 lb beef stew meat, cut into small pieces
- 2 carrots, sliced
- 2 zucchini, diced
- 2 sprigs fresh thyme
- 1 bay leaf
- 1 tsp fine sea salt
- 2 tbsp fresh parsley, chopped
Instructions
- In a large pot, bring bone broth to a simmer over medium heat.
- Add beef stew meat, carrots, thyme, bay leaf, and salt. Cover and simmer for 30 minutes, until beef is tender.
- Add zucchini and simmer 8-10 minutes more, until just tender but not mushy.
- Discard the thyme sprigs and bay leaf.
- Ladle into bowls and finish with fresh parsley.
