Roasting radishes softens their bite and turns them almost sweet, and folding them into a live-culture buttermilk ranch afterward keeps that tang bright instead of cooked away. This is one of those side dishes that quietly does more for your gut than the protein next to it.

Ingredients

  • 2 bunches radishes, trimmed and halved (about 1 lb)
  • 2 tbsp olive oil
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 1/2 cup cultured buttermilk
  • 1/4 cup full-fat sour cream
  • 1 tbsp fresh chives, minced
  • 1 tsp fresh dill, minced
  • 1 small garlic clove, grated
  • 1/2 tsp onion powder
  • Squeeze of lemon juice

Instructions

  1. Preheat oven to 425°F. Toss radishes with olive oil, salt, and pepper on a sheet pan.
  2. Roast 18-22 minutes, flipping once, until edges caramelize and radishes turn tender.
  3. While radishes roast, whisk buttermilk, sour cream, chives, dill, garlic, and onion powder in a bowl until smooth.
  4. Season the ranch with salt, pepper, and a squeeze of lemon.
  5. Pile the warm radishes onto a plate and drizzle generously with the ranch, or serve it on the side for dipping.
