Ingredients

  • 6 medium carrots, chopped
  • 1 fennel bulb, chopped

Instructions

  1. Warm olive oil in a pot over medium heat. Add carrots, fennel, and ginger. Cook, stirring, for 5 minutes.
  2. Pour in the broth, bring to a boil, then reduce heat and simmer for 20 minutes until the vegetables are very tender.
  3. Blend until smooth using an immersion blender or standing blender.
  4. Stir in coconut milk and season with salt and white pepper. Warm through and serve garnished with chives.
