Ingredients

  • 2 salmon fillets (about 5 oz each)
  • 1 cup quinoa, rinsed
  • 2 cups broccoli florets
  • 1 avocado, sliced

  • 1 lemon (zest and juice)
  • 1 tbsp fresh dill, chopped
  • 1/4 cup pumpkin seeds

Instructions

  1. Preheat the oven to 400°F.

  4. Pat the salmon dry, season with salt and pepper, and place on a separate baking sheet. Roast for 10 to 12 minutes, until it flakes easily with a fork.
  5. Whisk the remaining olive oil with the lemon zest and juice to make a dressing.
