Ingredients
- 1 red onion, thinly sliced
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 1 tbsp sugar
- 1 tsp fine sea salt, divided
- 2 cans (15 oz each) black beans, rinsed and drained
- 1 cup corn kernels, fresh or thawed frozen
- 1 red bell pepper, diced
- 1/2 cup cilantro, chopped
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1/2 tsp ground cumin
Instructions
- In a small saucepan, warm the vinegar, water, sugar, and 1/2 tsp salt just until the sugar dissolves.
- Pour the warm brine over the sliced onion in a jar and let sit at least 20 minutes, or refrigerate up to a week.
- In a large bowl, combine the black beans, corn, bell pepper, and cilantro.
- Whisk together the olive oil, lime juice, cumin, and remaining 1/2 tsp salt.
- Drain about 1/3 cup of the pickled onions from the brine and fold them into the salad along with the dressing.
- Toss well, taste, and adjust salt or lime as needed.
- Chill for 10 minutes before serving for the flavors to settle.
