Instructions
- Preheat oven to 400°F (200°C). Toss chickpeas with olive oil and paprika. Roast 25 minutes, shaking halfway, until crisp.
- Whisk tahini, garlic, lemon juice, dijon, and a splash of water into a smooth dressing.
- Massage kale with about half the dressing for 2 minutes until it softens.
- Toss kale with remaining dressing, top with roasted chickpeas and parmesan.
