A flatbread that leans into sweet-and-savory in the best way. Roasted grapes turn jammy and concentrated, brie melts into something wonderfully gooey, and a drizzle of honey ties it all together. Grapes' polyphenols and the fermented notes in a good brie mean this appetizer is more than just an indulgence.
Ingredients
- 2 large flatbreads or naan
- 2 cups seedless red grapes
- 200g brie, sliced
- 2 tbsp olive oil, divided
- 1 tbsp fresh thyme leaves
- 2 tbsp honey
- Toasted walnuts to finish
Instructions
- Preheat oven to 200C. Toss grapes with 1 tbsp olive oil. Roast on a baking sheet for 15 minutes until soft and starting to burst.
- Meanwhile, brush flatbreads with remaining olive oil and place on a separate baking sheet.
- Arrange brie slices over the flatbreads. Bake 8-10 minutes until the cheese is melted and bubbling.
- Top with roasted grapes, fresh thyme, toasted walnuts, and a drizzle of honey. Slice and serve warm.

Why This Is Good for Your Gut
Grapes contain resveratrol and other polyphenols shown to support a healthy balance of gut bacteria, retained through roasting. Walnuts have documented prebiotic effects in clinical trials. Brie, depending on the variety, can carry some beneficial bacterial cultures from its production process.
Great for sharing, but honestly, it disappears fast enough that you might want to make two.
