Skip the bagel and build the board around thin cucumber rounds instead, so every bite of smoked salmon still gets something cool and crisp underneath without the carb load of bread. Fresh dill, capers, and a squeeze of lemon do the rest of the work, no cooking required.

Ingredients

  • 8 oz smoked salmon, thinly sliced
  • 2 English cucumbers, sliced into thin rounds
  • 8 oz cream cheese, softened
  • 2 tbsp capers, drained
  • 1/4 cup thinly sliced red onion
  • 3 tbsp fresh dill, chopped, plus extra sprigs for garnish
  • 1 lemon, cut into wedges, plus 1 tsp zest
  • 8 radishes, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • Freshly cracked black pepper, to taste

Instructions

  1. Stir the lemon zest and 2 tbsp of the chopped dill into the softened cream cheese. Set aside.
  2. Arrange the cucumber rounds across a large serving board.
  3. Spoon or pipe a small dollop of the dill cream cheese onto each cucumber round.
  4. Fold or roll the smoked salmon slices and place one on top of each round.
  5. Scatter capers, red onion, and radish slices over the board.
  6. Drizzle everything with olive oil, finish with the remaining dill, cracked pepper, and lemon wedges on the side.
  7. Serve immediately, or chill for up to 1 hour before serving.

Why This Is Good for Your Gut

Smoked salmon supplies protein and omega-3 fats without the digestive weight of a heavy bread base, and building the board on cucumber instead of bagels keeps the whole plate light on refined carbohydrates. Capers and fresh dill add flavor without leaning on anything processed or sugar-laden.

Set this out on a platter and let everyone build their own bite, dill sprig and all.
