Ingredients

  • 8 eggs
  • 1 cup mushrooms, diced
  • 2 cups baby spinach, chopped
  • 1/4 cup diced onion
  • 1 tbsp olive oil
  • 1/4 cup crumbled feta
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 180°C (350°F). Grease a 12-cup muffin tin well.
  2. Heat olive oil in a skillet over medium heat. Sauté onion and mushrooms for 5 minutes until softened. Add spinach and cook until wilted. Let cool slightly.
  3. Whisk eggs in a large bowl with salt, pepper, and nutmeg. Stir in the cooled vegetable mixture and feta.
  4. Divide mixture evenly among muffin cups, filling each about two-thirds full.
  5. Bake 18-20 minutes until set and lightly golden on top. Cool 5 minutes before removing.
