Ingredients
- 4 cups whole milk
- 2 tbsp viili starter culture (or 2 tbsp store-bought viili yogurt)
- 4 stalks rhubarb, sliced into 1-inch pieces

- Zest of 1 orange

Instructions
- Warm the milk gently to about 70°F (just above room temperature), then whisk in the viili starter culture.
- Pour into clean jars, cover loosely, and let sit undisturbed at room temperature for 12-24 hours until thickened and slightly tangy. Refrigerate once set.
- Preheat oven to 400°F. Toss rhubarb with maple syrup, vanilla, and orange zest on a baking sheet.
- Roast for 15-20 minutes until tender and lightly caramelized at the edges.
- Spoon viili into bowls, top with warm roasted rhubarb, a drizzle of maple syrup, and chopped pistachios.
