Ingredients
- 4 medium beets, scrubbed
- 1 cup green or brown lentils, rinsed
- 3 cups water or vegetable broth
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 small shallot, finely diced
- 1/3 cup walnuts, toasted and chopped

Instructions
- Preheat the oven to 400°F. Wrap the beets individually in foil and roast for 45-55 minutes, until a knife slides in easily.
- While the beets roast, simmer the lentils in the water or broth for 20-25 minutes, until tender but not mushy, then drain.
- Once cool enough to handle, peel the beets and cut into wedges.
