Ground beef and shredded cabbage cook down together in one skillet until the cabbage turns soft and slightly caramelized at the edges. Nothing sweet touches this pan, just meat, cabbage, and enough seasoning to make it taste finished. Our Turkey and Sweet Potato Skillet with Sage follows the same one-pan, no-added-sugar approach.

Ingredients

  • 1 lb ground beef
  • 1 tbsp avocado oil
  • 1 small head green cabbage, shredded
  • 2 carrots, grated
  • 1 tbsp coconut aminos
  • 1 tbsp apple cider vinegar
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper

Instructions

  1. Heat avocado oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 6 minutes. Drain excess fat if needed.
  2. Add cabbage and carrots to the skillet, stirring to combine with the beef.
  3. Cover and cook for 6-8 minutes, stirring occasionally, until cabbage is tender.
  4. Stir in coconut aminos, apple cider vinegar, salt, and pepper.
  5. Cook uncovered 2 minutes more to let any liquid reduce, then serve hot.

Why This Is Good for Your Gut

Cabbage is a genuine source of glutamine, an amino acid the cells lining the gut use directly as fuel for repair. Ground beef adds zinc and iron, and with no added sweetener anywhere in the pan, this fits Whole30's stricter no-sugar standard exactly as written, not just in spirit.

This is a good one to lean on during a Whole30 reset when you want something filling that doesn't take much thought. For the research behind why a reset like this affects digestion, see Whole30 and Your Gut: What Has Been Studied.
