Whole30 Turkey Chili with Sweet Potato

Trading beans for diced sweet potato gives this chili the same heartiness without breaking Whole30's no-legume rule, and there's no sugar anywhere near this pot, not even the tomatoes get a pinch of it. Ingredients

  • 1 lb ground turkey
  • 1 tbsp avocado oil
  • 1 medium sweet potato, diced small
  • 1 (28 oz) can crushed tomatoes
  • 2 cups bone broth
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp fine sea salt
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Heat avocado oil in a large pot over medium heat. Add ground turkey and cook, breaking it up, until browned, about 6 minutes.
  2. Add diced sweet potato, crushed tomatoes, bone broth, cumin, paprika, and salt. Stir to combine.
  3. Bring to a simmer, then cover and cook for 25-30 minutes, until sweet potato is tender and the chili has thickened.
  4. Uncover and simmer 5 minutes more if a thicker consistency is preferred.
  5. Ladle into bowls and top with fresh cilantro.
